Lunch vendor opens in Seadrift

SEADRIFT – One woman beat cancer and brought her snack shop back to life.

JoJo’s Food and Snack shop opened Tuesday on Main Street, serving dozens of customers who wanted to try the new take-out lunches.

Each day, owner Josephine London, prepares a different menu, from fried rice to barbecue. Her husband finished building the concession stand and installed a picnic table and bench.

The couple moved to town in February 2000 and the day before move-in, the house escaped a huge grass fire that swallowed the land around it due to fresh dirt piles from a new sewage system, husband Bob London said.

Josephine London tried to open the shop years ago at the dockside, but then found out she suffered from cancer of the esophagus. Now, a picture of perfect health, she refocused her efforts.

Q: What made you open your shop?

A: Really, I had it before in 2003 and then I quit. My husband built this for me. I was going to open it last year, but I got sick. I had a tumor in my esophagus. I went through radiation and all that stuff. Finally, I got this open. It’s my first day and so far, so good.

Q: Why did you want to serve food?

A: I really love cooking. Everybody tastes my food and says, “Why don’t you sell it?”

Q: Were you nervous?

A: It’s just something for me to do. It’s to keep me busy. I’m really hyper. I love cooking, especially oriental. My parents are both Filipino, but I learned it on my own. I didn’t even know steak when I married my husband 32 years ago.

Q: Do you worry about gas prices?

A: No. If I make just enough to pay my bills, if it’s a little bit more, that’s fine. I enjoy seeing people enjoying my cooking.

Q: How many customers have you had so far? (11:30 a.m.)

A: I had more than 20 already. They’ve been calling ahead of time.
