Food service inspections for Dec. 6-12

The Victoria City-County Health Department Environmental Health Division inspects places where food is served in Victoria, DeWitt, Jackson and Calhoun counties.
In the inspection reports, each violation in the Food Temperature/Time Requirements category is 5 demerits; in the Personnel/Handling/Source Requirements category, 4 demerits; and in the Facility and Equipment Requirements, 3 demerits. Zero is a perfect score, while 100 demerits is the worst possible score.
Each Wednesday, the Advocate publishes inspection results from the previous week. All demerits are reported, but only those in the categories of Food Temperature/Time Requirements and Personnel/Handling/Source Requirements are detailed.
FOOD SERVICE INSPECTIONS FOR WEEK ENDING DEC. 14:
City Bakery and Restaurant, 1204 E. San Antonio St., Victoria. Demerits: 27. Must wash hands before sanitizer. Using sanitizer with no documentation. Use gloves or tongs with ready-to-eat food. Keep documentation of time and temperature on food that is out at room temperature. Need soap in the women's restroom. Need towels and toilet paper in the men's restroom. Label the bleach bucket. Need thermometer in white refrigerator. Clean the ice machine. Post hand washing signs. Five facility or equipment violations.
Taqueria El Rodeo No. 2, 3402 Sam Houston Drive, Victoria. Demerits: 17. Need to properly cool food before putting in walk-in cooler. Improper cold-hold temperature. Discard any food in the walk-in cooler that has been out of temperature for more than four hours. Walk-in cooler is not holding at 41 degrees. Recommend light shields in the kitchen area. One facility or equipment violation.
Wienerschnitzel No. 595, 3602 John Stockbauer Drive, Victoria. Demerits: 17. Need to wash hands in between tasks. Need to use gloves when handling buns. Need to label spray bottles and soap container. Need thermometer in tabletop by grill. Need to use rags with sanitizer; can't just use soapy water to wipe food contact surfaces. Three facility or equipment violations.
Subway No. 651, 8621 N. Navarro St., Victoria. Demerits: 15. Improper cold-hold temperature. Recommend discarding any potentially hazardous foods kept longer than four hours. Walk-in not holding at 41 degrees. Two facility or equipment violations.
The Donut Palace, 3602 Houston Highway Suite J, Victoria. Demerits: 14. Cannot wash hands in the three-compartment sink. Spray nozzle needs to be two inches above sink level. Hand sink needs to be more accessible. Need to use three steps to wash dishes. Cannot use white thank-you sacks to store food (dough); use food-grade storage containers/bags. Defrost under cold running water or in cooler. Three facility or equipment violations.
Cobra Corner Store, Inc., 5895 Farm-to-Market Road 616, Vanderbilt. Demerits: 10. Ice bags need proper labels. Cannot have Raid insect spray in establishment. Need to keep ice scoop on clean, sanitized surface. Two facility or equipment violations.
Stripes No. 7349, 1302 E. Rio Grande St., Victoria. Demerits: 10. Dispose of out-of-date milk in coffee creamer cooler. Need thermometer in coffee cooler. Clean the ice machine. Two facility or equipment violations.
Denny's Restaurant, 7601 N. Navarro St., Victoria. Demerits: 9. Address problem with gnats in the storage area. Keep the ice scoop on a clean, sanitized surface. Recommend a good general cleaning of the establishment. Weatherstrip the back door. Three facility or equipment violations.
