The Victoria City-County Health Department Environmental Health Division inspects places where food is served in Victoria, DeWitt, Jackson and Calhoun Counties.
In the inspection reports, each violation in the Food Temperature/Time Requirements category is 5 demerits; in the Personnel/Handling/Source Requirements category, 4 demerits; and in the Facility and Equipment Requirements, 3 demerits. Zero is a perfect score, while 100 demerits is the worst possible score.
Each Wednesday, the Advocate publishes inspection results from the previous week. All demerits are reported, but only those in the categories of Food Temperature/Time Requirements and Personnel/Handling/Source Requirements are detailed.
FOOD SERVICE INSPECTIONS FOR WEEK ENDING OCT. 12
Maya Mexican Restaurant, 1909 N. Esplanade St., Cuero. Demerits: 26. Improper cold hold temperature. Thaw raw meat under cold running water or in a cooler. Use utensils to remove tortillas from the grill. Store raw meat below cooked and ready to eat foods. Keep raw chicken on the bottom. Do not thaw raw meat in the mop sink. Remind employees about proper methods of thawing raw meat. Two facility or equipment violations.
Johnson Oil, Tiger Tote Food Store No. 16, 502 N. Esplanade St., Cuero. Demerits: 25. Keep spray nozzle at least 2 inches about the flood level of the sink. Do not set anything in the hand washing sink. Address problem with flies. Address problem of mice found in the utility closet. Need to set up ware washing sinks - washing with soap and water, rinse with clean water in second sink and sanitize in third sink. Need to educate the employees on ware washing procedures. Store the ice scoop on a clean, sanitized surface. Clean the storage cabinets. Seven facility or equipment violations.
Shellfish Sport Bar and Grille, 2615 N. Highway 35, Port Lavaca. Demerits: 18. Improper cold hold temperatures. Wash hands before putting gloves on. Address problem with gnats in the bar area. Need thermometer in the table top by the hand washing sink. Replace the cracked ice buckets. Weather strip the back door. Three facility or equipment violations.
Fastrack Express, 2004 N. Esplanade St., Cuero. Demerits: 17. Dispose of expired medicine, deli meat and Pedia Care. Date label with a seven-day use-by date opened containers of tuna, pimento cheese and taco fixings. Do not block the hand washing sink. Do not block the mop sink. Three facility or equipment violations.
La Antiqua, 737 N. Highway 35, Port Lavaca. Demerits: 15. Improper cold hold temperature. Wash hands before putting on gloves. Sanitizer concentration is too strong. Fix leak at the hand washing sink and food preparation sink. Two facility or equipment violations.

Main Street Kaffee Haus and Deli, 104 E. Main St., Cuero, inspected Oct. 1 with 8 demerits. Re-inspected Oct. 8, cold hold violation corrected.
Stripes No. 2244, 1200 E. Broadway St., Cuero, inspected Oct. 1 with 22 demerits. Re-inspected Oct. 8, violations corrected. Need to continue working on eliminating gnats in the kitchen.
Mexico Tipico, 421 N. Virginia St., Port Lavaca, inspected Sept. 28 with 40 demerits. Re-inspected Oct. 10, violations not corrected. Will follow up next week.
Airline Express, 2000 E. Airline Road, Victoria, inspected July 10 with 16 demerits. Re-inspected Oct. 5, most violations corrected. Still need to work on date-labeling.
Buffalo Wild Wings, 7905 N. Navarro St., Victoria, inspected Aug. 23 with 18 demerits. Re-inspected Oct. 5, all violations corrected.
