Reuben's Journey - week 15

Chicken Enchilada Surprise

Prep time: 15 minutes

Cook time: 20 minutes

• 1 Tbsp Hill Country Fare canola oil

• 1 pound Hill Country Fare frozen boneless skinless chicken breasts, thawed and thinly sliced

• 1 cup chopped onion

• 1 cup chopped tomatoes

• 1 cup shredded H-E-B fat free cheddar

• 1 can (15 oz.) Hill Country Fare enchilada sauce; red or green

• 2 H-E-B white corn tortillas, cut into thin strips

Preheat oven to 400 degrees. Spray a 9x13-inch baking pan with non-stick cooking spray and set aside.

Heat a large skillet over high heat for 3 minutes. Add the oil and thinly-sliced chicken and stir-fry the chicken for 3 to 4 minutes, or until fully cooked. Season the chicken to taste with pepper.

Combine the chicken, onion, tomato, shredded cheese and enchilada sauce in the prepared baking dish. Sprinkle the tortilla strips on top and bake uncovered for 20 minutes, or until cheese is bubbly on the edges and tortillas are golden. Serve immediately.

Exercise: Reuben Ybarra continues to participate in Zumba and aqua Zumba, walking and jogging. He will also take additional fitness measures, such as lifting weights.

*Ybarra has chosen not to reveal his weight until the final weigh-in on Oct. 7, but said he continues to lose.
