Dietitians Dish: Modifying beloved recipe cuts calories not taste

Modified Pumpkin Roll
• 6 Tbsp. all-purpose flour
• 6 Tbsp. whole wheat flour
• 1/2 tsp. baking powder
• 1/2 tsp. baking soda
• 1 tsp. ground cinnamon
• 3/4 tsp. ground cloves
• 1/4 tsp. salt
• 3/4 cup egg substitute or 6 egg whites
• 1/2 cup granulated sugar
• 2/3 cup 100 percent pure pumpkin puree
Preheat oven to 375 degrees. Grease 15-by-10-inch jelly-roll pan and line with wax paper. Grease and flour paper. Sprinkle a thin kitchen towel with powdered sugar, about 1/8 cup.
In a small bowl, combine first seven ingredients.
In a large mixing bowl, beat together egg, sugar and pumpkin puree.
Stir flour mixture into pumpkin mixture just until ingredients are combined.
Pour batter into jelly-roll pan and bake for 13-15 minutes, until the cake springs back when touched. (If using a dark-colored pan, begin checking for doneness around 11 minutes.) Immediately loosen and turn cake onto prepared towel. Carefully peel off wax paper from cake. Roll up cake and towel together. Cool on wire rack.
For filling, beat together until smooth:
• 1 pkg. (8 oz.) Neufchatel, softened
• 1/2 cup powdered sugar, sifted
• 3 Tbsp. butter or margarine, softened
• 2 tsp. vanilla extract
Carefully unroll cake. Spread filling mixture inside of the cake. Reroll cake. Wrap with plastic wrap and refrigerate at least one hour. Sprinkle with powdered sugar before serving, if desired. Makes 10 servings.
Nutrition facts per serving: 235 calories, 8 g fat, 5 g protein, 35 g carb.

I have taste tested this recipe and the original on some very willing participants, and honestly, they could not tell which one was the healthier version. Try this modified recipe this season and cut 135 calories. You can even test this recipe on your family and friends - it can be our little secret.
