Food service inspections

The Victoria City-County Health Department Environmental Health Division inspects places where food is served in Victoria, DeWitt, Jackson and Calhoun counties.

In the inspection reports, each violation in the Food Temperature/Time Requirements category is 5 demerits; in the Personnel/Handling/Source Requirements category, 4 demerits; and in the Facility and Equipment Requirements, 3 demerits. Zero is a perfect score while 100 demerits is the worst possible score.

Each Wednesday, the Advocate publishes inspection results from the previous week. All demerits are reported, but only those in the categories of Food Temperature/Time Requirements and Personnel/Handling/Source Requirements are detailed.



FOOD SERVICE INSPECTIONS FOR WEEK ENDING MAY 10

Hunan Restaurant Inc., 601 E. Mockingbird Lane, Victoria. Demerits: 55. Improper cold-hold temperature. Wash hands when entering the kitchen and before putting on gloves. Employee drinks need lid and straw; must be spill proof. Keep foods covered in the freezer and cooler. Eggs left out overnight need to be discarded. Do not thaw frozen shrimp out at room temperature. Wash hands and use gloves when handling ready-to-eat foods. Change gloves between tasks. Do not use raw meat boxes to store cooked food in. Date label cooked, ready-to-eat foods with use-by dates. Need hot water at hand washing sink by three-compartment sink. Walk-in cooler not holding temperature at 41 degrees. Address problem with flies in the kitchen. Repair the screen door in the kitchen. Label spray bottle and buckets. The manager/owner needs to educate employees on safe food handling, safe food temperatures and hand washing. The drain by the ice machine is clogged. There is water all over the kitchen floor. Clean and sanitize the ice machine. Five facility or equipment violations.

McDonald's No. 4, 7808 N. Navarro St., Victoria. Demerits: 36. Improper cold-hold temperature. Wash hands between tasks. Need cups with lids and straws. Hand sink is for hand washing only. Wash hands before putting on gloves. Cover food in the walk-in cooler. Label the spray bottles. Educate the employees on proper hand washing procedures and safe food temperatures. Repair the leak at the three-compartment sink. Thermometer in the small cooler at the counter needs to be calibrated. Clean the ice machine. Recommend a thorough general cleaning of the establishment. Five facility or equipment violations.

Speedy Stop No. 46, 5684 U.S. Highway 77 South, Victoria. Demerits: 20. Dispose of out-of-date fruit cups, medicine and prepared food. Date-label cut watermelon. Keep the time/temperature on food not holding at either 41 degrees or 135 degrees. Keep paper towels at the hand sink. Wet around the spray head. Need thermometers in the milk cooler and tabletop. Store the tongs on a clean, sanitized surface. Four facility or equipment violations.

The Lariat, 1022 S. Wells St., Edna. Demerits: 19. Wash hands in between tasks. Address problem of ashtray full of cigarettes in the room with the ice machine, kept next to the microwave. Use gloves when handling bread. Must have hot water at three-compartment sink. Do not store Raid in the food establishment. All pest control must be done by a licensed company. One facility or equipment violation.

Fastop Food Store No. 6, 3633 S.W. Moody St., Victoria. Demerits: 18. Need labels on sausage wraps. Dispose of out-of-date food. Date-label hot dogs, etc. in the cooler. Need a thermometer in the deli express cooler. Clean tongs every four hours. Two facility or equipment violations.

Fishbeck's Meat Market, 515 Irvine St., Yoakum. Demerits: 15. Wash hands before putting gloves on. Keep food covered in pans in walk-in cooler. Wash hands and wear gloves when handling sandwich meat and cheese. Do not reuse gloves. Clean and sanitize meat slicer and counters every two to four hours. One facility or equipment violation.

Jason's Deli, 5301 N. Navarro St., Victoria. Demerits: 13. Need ingredients list for self-serve cookies. Do not defrost food in the hand sink. Clean the ice machine. Need to post a 2013 permit. Three facility or equipment violations.

Frontier Barbecue Inc., 608 N.E. Street, Edna. Demerits: 11. Employee drinks need lids. Cover all food in the coolers. Keep paper towels at front hand sink. One facility or equipment violation.

Old-Fashioned Donuts, 909 W. Main St., Edna. Demerits: 11. Keep dough covered in freezer. Date label ham with seven-day use-by date. Keep items out of hand sink. One facility or equipment violation.

Bistro Cafe, 1200 Carl Ramert Drive, Yoakum. Demerits: 11. Dispose of expired liquid eggs, yogurt and tuna. Do not thaw chicken directly in the sink unless sink is cleaned and sanitized. Use a container and place in sink under cold, trickling water. Clean and sanitize the ice machine and the can opener blade. One facility or equipment violation.

McDonald's No. 2, 2701 Houston Highway, Victoria. Demerits: 10. Crates of buns contaminated with rodent droppings. Dispose of contaminated buns. A new shipment of buns was received to replace them. Address problem of flies in the kitchen. Two facility or equipment violations.

Linditas Tacos To Go, 405 Hopkins St., Yoakum. Demerits: 9. Improper cold-hold temperature. Store raw meat on the bottom shelf of the cooler.

Yummy Treats, 707 N. Wells St., Edna. Demerits: 8. Store raw meat below and away from other food. Date-label hot dogs with a seven-day, use-by date.

Speedy Stop No. 5, 5006 Houston Highway, Victoria. Demerits: 8. Ice bags need proper labels. Deli express needs use-by dates.

Heavenly Delights, 405 Hopkins St., Yoakum. Demerits: 8. Improper cold-hold temperature. Do not use pesticides, such as Raid, inside the mobile unit. Keep door closed to mobile unit or install a screen door. Store utensils with handles in the same direction. One facility or equipment violation.

VeraCruz, 3110 N. Navarro St., Victoria. Demerits: 7. Need to cover food in the walk-in cooler. Keep paper towels at the hand-washing sink. One facility or equipment violation.

Cafe Spoonz, 6106 N. Navarro St., Victoria. Demerits: 6. Address problem with flies in the prep area. A thermometer is needed in the rear tabletop. Two facility or equipment violations.

Sonic Drive In, 920 W. Main St., Edna. Demerits: 4. Wash hands at hand sink only, not at the three-compartment sink. Replace the cracked light shield in walk-in cooler.

Carino's Italian, 4904 N. Navarro St., Victoria. Demerits: 4. Wash hands before putting on gloves.

Holiday Inn Express, 111 Huvar St., Victoria. Demerits: 4. Date-label food. Need a use-by date on sausage and eggs.

La Hacienda Mexican Cafe, 3402 Houston Highway, Victoria. Demerits: 4. Cover all food in the coolers.

Niki's Roma Pizza, 7800 N. Navarro St., Victoria. Demerits: 4. Store raw hamburger meat and raw chicken below the ready-to-eat foods.

Speedy Stop No. 1, 8701 N. Navarro St., Victoria. Demerits: 4. Hot water in restrooms only 94 degrees. Will return to check the water to make sure it reaches 100 degrees.

Stripes No. 7348, 302 N. Navarro St., Victoria. Demerits: 4. Dispose of out-of-date medicines and date-labeled foods. Seal the holes that lead to the outside.
