Food service inspections

The Victoria City-County Health Department Environmental Health Division inspects places where food is served in Victoria, DeWitt, Jackson and Calhoun Counties.

In the inspection reports, each violation in the Food Temperature/Time Requirements category is 5 demerits; in the Personnel/Handling/Source Requirements category, 4 demerits; and in the Facility and Equipment Requirements, 3 demerits. Zero is a perfect score, while 100 demerits is the worst possible score.

Each Wednesday, the Advocate publishes inspection results from the previous week. All demerits are reported, but only those in the categories of Food Temperature/Time Requirements and Personnel/Handling/Source Requirements are detailed.

FOOD SERVICE INSPECTIONS FOR WEEK ENDING OCT. 11

Maya Mexican Restaurant, 1909 N. Esplanade St., Cuero. Demerits: 39. Improper cold-hold temperature. Wash hands with soap and water. Keep items in freezer covered. Use gloves when cutting vegetables. Need hot and cold water at the hand sink at bar. Walk-in cooler is not working. Do not block hand sink with mop. Address problem presence of flies. Label all chemical containers with name. Demonstration of required knowledge not evident. Seal the back door to keep flies out of kitchen. Will return to reinspect. Must see temperatures at 41 degrees or less. If they are not, restaurant must close. Ice down the tabletop until fixed and do not store anything in the bottom of it. Five facility or equipment violations.

Hungry Jacks Thirsty Inc., 1209 E. Airline Road, Victoria. Demerits: 28. Wash hands with soap before glove use. Employee drinks need lid and straw. Keep raw meat away from desserts. Need to have hot water at the bar. Keep hand sink accessible; boxes blocking hand sink should be removed. Need soap at the hand sink. Address problem with presence of roaches. Keep washcloths in the bleach bucket. Four facility or equipment violations.

Taqueria Vallarta, 302 S. Esplanade St., Cuero. Demerits: 24. Improper hot-hold temperature. Improper cold-hold temperature. Wash hands in between tasks. Recommend discarding any potentially hazardous foods that have been in the cooler more than four hours. Walk-in cooler not holding at 41 degrees. One facility or equipment violation.

IDK (I Don't Know), Mobile Unit 77901, Victoria. Demerits: 18. Wash hands in hand-washing sink. Employee drinks need lid and straw. Use gloves when cutting tomatoes. Make sure hand-washing sink is accessible before beginning any food preparation. One facility or equipment violation.

Telferner Grocery and Market, 202 S. Wood St., Telferner. Demerits: 17. Dispose of sausage rolls out at room temperature more than four hours. Need ingredient labels on packaged food. Out-of-date lunch meat dated with expiration of Sept. 15 needs to be disposed of. Wash hands and wear gloves.

Cuero Country Club, 1305 E. S. Railroad St., Cuero. Demerits: 13. Need hot water at hand sink at bar. Replace broken thermometer at the bar cooler. Post permit and last inspection. Three facility or equipment violations.

Fastrak Express, 2004 N. Esplanade St., Cuero. Demerits: 11. Ice bags need proper labels. Dispose of out-of-date medication. Clean out and sanitize the ice machine. One facility or equipment violation.

Sonic No. 1756, 1110 N. Esplanade St., Cuero. Demerits: 11. Wash hands in between tasks. Use gloves when handling ready-to-eat foods. Address problem with presence of flies. One facility or equipment violation.

Cuero Nursing and Rehabilitation, 1310 E. Broadway St., Cuero. Demerits: 7. Need hot water at the hand sink. Address problem with the presence of flies. One facility or equipment violation.

Dairy Queen, 802 N. Esplanade St., Cuero. Demerits: 4. Use gloves when handling ready-to-eat foods.

Back Porch Barbecue Inc., 2871 Garcitas Creek Road, Inez. Demerits: 4. Date-label the cooked brisket.

Subway, 4008 U.S. Highway 59 North, Victoria. Demerits: 4. Employee drinks need lid and straw.

El Zacatecas, 521 S. Esplanade St., Cuero, inspected Sept. 3 with 12 demerits. Reinspected Oct. 3 with violations corrected.
