Favorite Pecan Pie
About this recipe:
The difference comes from the butter, sugar and corn syrup being cooked together before other ingredients are added. You may also add 3 Tbsp. rum with the eggs for a rum pecan pie. Praline liqueur is even better. Note the recipe calls for pecan halves, not chopped pecans. It takes about two minutes to arrange the pecans in concentric circles on top of the filling, making a beautiful presentation that will impress your friends and family.
• 1/2 cup butter
• 1 cup sugar
• 1 cup light corn syrup
• 4 eggs, beaten
• 1 tsp. vanilla
• 1/4 tsp. salt
• 1 unbaked 9-inch pie shell
• 1-11/4 cup pecan halves
Combine butter, sugar and corn syrup in a saucepan; cook over low heat, stirring constantly, until sugar dissolves. Let cool slightly. Add eggs, vanilla and salt to mixture; mix well. Pour filling into unbaked pastry shell and top with pecan halves. Bake at 325 degrees for 50-55 minutes. Serve warm or cold.
Frito Snack Mix
• 1 (10.5-oz.) bag of Fritos
• 2 cups rice cereal (like Rice Chex)
• 2 cups pretzel twists
• 11/2 cups nuts (walnuts, peanuts, cashews or mixed nuts)
• 1 cup light brown sugar, packed
• 1/2 cup butter
• 1/2 cup light corn syrup
• 1 cup of mini M&Ms
Preheat oven to 350. In a large bowl, combine the Fritos, cereal, pretzels and nuts. Set aside. In a small saucepan, melt the sugar, butter and corn syrup over medium heat. Let the mixture come to a boil and then boil for four minutes without stirring. Remove the pan from heat and pour over corn chip mixture, stirring to coat evenly. Transfer mix to a large roasting pan and bake for eight minutes. Remove to stir and bake for an additional eight minutes. Transfer the mixture to a wax paper-lined counter and let it cool completely before breaking into large clumps. When cooled, sprinkle M&Ms over mix. Store in an airtight container for up to a week.
Layered Pudding Dessert
• 11/2 cups flour
• 3/4 cup softened margarine
• 1 cup chopped pecans
Preheat oven to 350 degrees. Mix all ingredients like a pie crust and press into a 9x13-inch pan. Bake for 15-20 minutes or until golden and let cool.
• 1 cup powdered sugar
• 1 (8-oz.) pkg. cream cheese
• 1 cup Cool Whip, thawed
Cream the sugar and cream cheese, then add Cool Whip. Spread over the cooled crust. Refrigerate.
• 2 packages (3 oz. each) instant pudding of your flavor choice
• 21/2-3 cups cold milk
Mix the pudding and the milk until well blended and let thicken slightly, then pour over the cream cheese layer. Refrigerate for two to four hours. Before serving, "frost" with Cool Whip and then sprinkle with finely chopped pecans.
• 2 tsp. instant coffee
• 1/4 cup sugar
• 1/4 tsp. cinnamon
• 2 Tbsp. water
• 2 cups pecan halves
• Dash of salt
Combine all ingredients in saucepan. Bring to a boil over medium heat and boil three minutes, stirring constantly. Spread on waxed paper and separate pecan halves as they cool. Pecans will be sugar-coated but not sticky.
The Victoria County Extension Education Association is selling its fresh 2013 shelled pecans and peanuts, which will arrive just in time for your Thanksgiving and Christmas holiday cooking, gift-giving or personal enjoyment.
This is the association's only fundraiser, and it provides funding for scholarships for local youth, 4-H support with contests and special projects, AgriLife Extension program at the South Texas Farm and Ranch Show, leadership training and educational programs for members as well as financial support to other organizations in Victoria County.
Orders are being accepted for fresh-shelled pecan halves and fresh-shelled raw Spanish peanuts. Pecans are $50 for a 5-pound box of pecan halves, and peanuts are $12 each in a 3-pound cloth bag.
Send orders to Ruby Sellers, 112 Acorn Drive, Victoria, TX 77905. Make checks payable to Victoria Extension Education Association. Include your telephone number on your check and the amount of nuts that you are ordering.
Customers from the surrounding counties should also include, in addition to the above information, a self-addressed stamped envelope to Sellers if you would like a reminder on pick-up date.
The deadline for ordering is 5 p.m. Oct. 14.
The pick-up date for orders is from 8 a.m. to 5 p.m. Nov. 22 at the Victoria Electric Cooperative Auditorium, 102 S. Ben Jordan St.
Pecans are used as pecan meal to thicken meat stews, they are roasted, toasted, chopped, used in vegetable dishes, eaten as snacks and are especially good in sweet desserts. They can be spiced, sugared, salted, placed in dips, sauces and made into syrups.
Pecans are a good source of protein and unsaturated fats. They are rich in omega-6 fatty acids. Freezing retains the freshness and flavor of the nuts.
