The wood-burning brick oven at Toscana Artisan Bakery and Bistro is turning out pizzas again.
Previous owner Andy Sparkman sold the business to Greg Moore, of Victoria, who reopened the bistro in December.
"I really liked that pizza." Moore, 53, said. "It's made like a pizza is supposed to be made - in a wood-burning oven."
The old restaurant staff was hired back, and now, they are running the register and cooking in the kitchen, he said. Moore plans to let Rocky Ray Martinez, Sparkman's right-hand man before the restaurant closed in July, manage the restaurant while he continues to work at Formosa and work in the family business, Cedar Swings N Things.
"Martinez will take care of the show, and I'll come in once a week and do payroll."
As for the menu, Moore wanted to leave it as it was when the restaurant was last open. Sparkman will also work with the restaurant to add new dishes or pizzas to the menu, he said.
In the meantime, Moore is working to get the restaurant's beer and wine license back. Until then, customers are allowed to bring their own beer or wine, he said.
Though the Facebook page still says its permanently closed, Martinez said they are working to update the page.
Moore won't spend much time behind the counter at the restaurant, but he will be there to enjoy the pizza.
"It's my Wednesday night thing," Moore said.
