Food service inspections

The Victoria City-County Health Department Environmental Health Division inspects places where food is served in Victoria, DeWitt, Jackson and Calhoun counties.

In the inspection reports, each violation in the Food Temperature/Time Requirements category is 5 demerits; in the Personnel/Handling/Source Requirements category, 4 demerits; and in the Facility and Equipment Requirements, 3 demerits. Zero is a perfect score, while 100 demerits is the worst possible score.

Each Wednesday, the Advocate publishes inspection results from the previous week. All demerits are reported, but only those in the categories of Food Temperature/Time Requirements and Personnel/Handling/Source Requirements are detailed.

FOOD SERVICE INSPECTIONS FOR WEEK ENDING JULY 18

La Terraza Mexican Grill, 300 N. U.S. Highway 77-A, Yoakum. Demerits: 49. Wash hands before glove use. Discard any food kept in cooler more than four hours. Use gloves when handling ready-to-eat foods. Address problem of condensation dripping on food in cooler that isn't holding at 41 degrees. Work on date-labeling. Do not have items blocking the hand sink. Address problem of presence of flies. Store sanitizer rags in sanitizer buckets. Manager did not demonstrate knowledge. Need thermometers that work properly in coolers. Clean and sanitize all food contact surfaces. Seven facility or equipment violations. Permit has been suspended until violations are corrected.

Dragon House, 202 S. U.S. Highway 77-A, Yoakum. Demerits: 42. Wash hands in between tasks. Employee drinks need lid and straw. Do not eat lollipops during food preparation. Ice in the ice machine needs to be discarded. Cannot store whole watermelon on the ice in ice machine. Use gloves when handling ready-to-eat foods. Store raw meat below other food. Date-label food with seven-day, use-by date. Hand sink was full of chicken. Hand sink should only be used for hand-washing. Keep paper towels at hand sink. Address problem with presence of flies. Store sanitizer rags in sanitizer buckets. Store chemicals away from food preparation area. Manager did not demonstrate knowledge of food safety and sanitation. Ice machine needs to be cleaned. Store ice scoop on a clean, sanitized surface. May not use thank-you bags to store food in directly. Six facility or equipment violations.

Cervantes Restaurant, 318 Front St., Yoakum. Demerits: 27. Improper cold-hold temperature. Wash hands only at the hand sink. Employee drinks need lids and straws. Discard any potentially hazardous foods that have been in the cooler more than four hours. Store raw meat below other items. Work on date-labeling food with seven-day, use-by date. Main refrigeration is not holding at 41 degrees or less. Use licensed pest control only. Will move all potentially hazardous foods to the Coke cooler in the back room until refrigerators are repaired. One facility or equipment violation.

Mi Tierra Mexican Cafe, 401 Lott St., Yoakum. Demerits: 26. Employee drinks need lid and straw. Cover food in walk-in cooler. Wear gloves when cutting vegetables. Store raw meat below other food. Date-label food with seven-day, use-by date. Label chemical containers. Two facility or equipment violations.

Ganado Cafe, 118 S. Third St., Ganado. Demerits: 19. Improper cold-hold temperature. Wash hands and wear gloves when handling ready-to-eat foods. Date-label ready-to-eat foods with seven-day, use-by date. Coolers are not maintaining 41 degrees. Repair the leak under the three-compartment sink. One facility or equipment violation.

7-Eleven, 3601 John Stockbauer Drive, Victoria. Demerits: 19. Improper hot-hold temperature. Wash hands before glove use. Make sure all ice bags have labels. Date-label items in cooler. Hand sink blocked by trash, fan and boxes. Do not place items so that the hand sink is blocked. Current permit not posted. Does not show current owner is now 7-Eleven. Two facility or equipment violations.

Get and Go Food Mart No. 2, 508 Irvine St., Yoakum. Demerits: 18. Ice bags need proper labels. Dispose of dented cans. Must be hot water in the restroom and at the mop sink. Keep paper towels in the restroom. Store ice scoop on clean, sanitized surface. Two facility or equipment violations.

Taco Bell No. 16800, 7902 N. Navarro St., Victoria. Demerits: 15. Improper cold-hold temperature. Address problem with presence of flies. Change out sanitizer at the three-compartment sink. Repair leak behind wall at hand washing sink by drive-thru window. Line coolers and food preparation tables need thermometers. Clean and sanitize the food preparation surfaces. Five facility or equipment violations.

Tiger Tote No. 7, 608 U.S. Highway 77-A, Yoakum. Demerits: 15. Improper hot-hold temperature. Keep time on sausage rolls. Store ice scoop on clean, sanitized surface. Post the 2014 permit. Two facility or equipment violations.

Pump N Munch, 1106 E. U.S. Highway 59, Ganado. Demerits: 14. Wash hands before glove use. Document time on hot dogs are left out in warmer. Address problem of presence of droppings in the storage room. Make sure all utensils are washed, rinsed and sanitized. Store ice scoop on clean, sanitized surface. Two facility or equipment violations.

Cowboy Barbecue Inc., 907 N. East St., Edna. Demerits: 12. Improper cold-hold temperature. Store raw chicken below beef. Do not allow cats or animals in the storage room. One facility or equipment violation.

Victoria Mini Mart, 2207 N. Ben Jordan St., Victoria. Demerits: 11. Capri Sun is not labeled for individual sale. Dispose of out-of-date milk and unsound produce. Must have accessible hand sink before cooking. Clean the ice machine. Store pickle tongs on clean, sanitized surface. Permit needs to be visible. Three facility or equipment violations.

Jenny's Tacos, 220 W. Morris St., Yoakum. Demerits: 11. Improper cold-hold temperature. Repair leak at the three-compartment sink. Two facility or equipment violation.

Burger Shack and More, 310 W. Gonzales St., Yoakum. Demerits: 9. Must have soap in restroom. Use a licensed pest control only. Repair leak under the three-compartment sink. Three facility or equipment violations.

China Wok, 302 W. Main St., Edna. Demerits: 7. Store raw meat below eggs. Use a licensed pest control only. One facility or equipment violation.

Japalenos Cafe, 2303 S.W. Moody St., Victoria. Demerits: 7. Store raw chicken below other food. Store sanitizer rags in sanitizer buckets. Use licensed pest control only.

I Stop No. 4, 611 N. U.S. Highway 77-A, Yoakum. Demerits: 7. Candy may not be sold without proper labels. Store ice scoop on a clean, sanitized surface. One facility or equipment violation.

The Lucky Store, 101 E. Rio Grande St., Victoria. Demerits: 6. Put in a hand sink as was mentioned in the last inspection. Pickle tongs need to be stored on a clean, sanitized surface. Two facility or equipment violations.

Estella's Mexican Restaurant, 109 S. Third St., Ganado. Demerits: 5. Improper cold-hold temperature.

REINSPECTIONS

Eagleford Restaurant LLC, 604 N. Esplanade St., Cuero, inspected June 25 with 5 demerits. Reinspected July 11 with cold-hold violation corrected.

McAlisters Sweet Shop, 103 N. Hunt St., Cuero, inspected June 19 with 8 demerits. Reinspected July 9 with violations corrected.

Dairy Queen No. 14142, 1202 E. U.S. Highway 59, Ganado, inspected June 19 with 7 demerits. Reinspected July 15 with need to continue working on violations. Faucet leaks when open. It leaks to the side and to the ground.

J and J Drive Inn, 602 S. Third St., Ganado, inspected June 19 with 5 demerits. Reinspected July 15 with cold-hold violation corrected.
