Food service inspections

The Victoria City-County Health Department Environmental Health Division inspects places where food is served in Victoria, DeWitt, Jackson and Calhoun counties.

In the inspection reports, each violation in the Food Temperature/Time Requirements category is 5 demerits; in the Personnel/Handling/Source Requirements category, 4 demerits; and in the Facility and Equipment Requirements, 3 demerits. Zero is a perfect score, while 100 demerits is the worst possible score.

Each Wednesday, the Advocate publishes inspection results from the previous week. All demerits are reported, but only those in the categories of Food Temperature/Time Requirements and Personnel/Handling/Source Requirements are detailed.

FOOD SERVICE INSPECTIONS FOR WEEK ENDING MAY 23

China B, 3611 N. Navarro St., Victoria. Demerits: 45. Employees must wash hands upon entering the kitchen. Do not wash hands in the three-compartment sink. Drinks need to be stored below food preparation areas. Cover food in the walk-in. Dispose of wet bags of potato starch. Store raw food away from ready-to-eat foods. Do not stack containers on top of each other. Keep time on eggs kept out. Date-label. The hot water must be available at all four hand sinks in the kitchen. Do not keep towels and screen in the hand sink. Back door needs to be kept closed to keep flies out. Change the fly strips. Flies were not listed on the pest control invoice for treatment. Must not store vitamins and medication in the tabletop. Replace light on grease trap. Scheduled to pump grease trap May 9. Last pumped out Jan. 22. Address problem with standing water in trough by the three-compartment sink, from the vent hood. Last cleaned March 16. Do not use metal cans and plastic containers to scoop dry ingredients. Clean and sanitize the can opener and the ice machine. Need a buffet plate sign. Need a disclosure because of serving raw oysters. Need hand wash sign at the hand sink. Keep oyster tags. Employee restroom needs a self-closing door. Keep containers of food off the ground. Six facility or equipment violations.

Texana Food Mart, 1021 S. Wells St., Edna. Demerits: 38. Employee drinks need lids and straws. Ice bags need proper labels. Dispose of packages of food that were eaten through by rodents. Address problem of rodent droppings found on the deli tissue that is being used to as a liner in food baskets served to customers. Date-label big bin of chicken in the walk-in cooler. Keep soap and paper towels in the men's restroom. Address problem of rodent droppings found in establishment. Manager did not demonstrate knowledge of food safety and sanitation. Grease should not be disposed of outside of the building. Need a thermometer in the tabletop and milk cooler. Clean the ice machine and clean and sanitize all food contact surfaces. The entire establishment needs a good, thorough cleaning. Seal all the holes in the establishment and replace broken tiles. Clean the grease around the fryer. Establishment is voluntarily closing to address critical violations. Six facility or equipment violations.

Dave's Cafe, 902 E. Broadway St., Edna. Demerits: 14. Store raw chicken below everything else. Need to store raw meat below other food. Date-label food with seven-day use-by date. Sanitizer bucket needs to be labeled. Need thermometer in tabletop. Two facility or equipment violations.

Esnack's El Paisa, Mobile Unit, 1706 Houston Highway, Victoria. Demerits: 14. Using ice to keep fruit cold. Fruit was prepared at the Houston Highway location. When they showed up at the special event location, there was not enough power for them. They did not prepare anymore fruit until the generator was brought in at 1:15 p.m. Work on sealing the screen doors. Must have hot water to wash hands properly. There was no hot water or water pressure to wash hands. Label the bleach bucket. Two facility or equipment violations.

Frontier Bar B Que Inc., 608 N. East St., Edna. Demerits: 12. Employee drinks need lids and straws. Cover the food in the walk-in cooler. Date-label food in walk-in cooler with a 7-day use-by date.

Taqueria Dona Mary, 501 S. Moody St., Victoria. Demerits: 11. Improper cold-hold temperature. Label bleach bucket and dilute. Follow the three-step process - wash, rinse and sanitize. Two facility or equipment violations.

A and R Navarro, 111 W. Hamilton St., Cuero. Demerits: 8. Improper cold-hold temperature. May not cook at home. Not permitted to sell more than snowcones. Recommend you wear hair restraints.

Cuero High School, 920 E. Broadway St., Cuero. Demerits: 4. Date-label hot dogs that came from another campus last Thursday.

The Shack, Farm-to-Market Roads 616 and 238, LaSalle. Demerits: 4. If they are going to bag ice and sell it to customers, they must get a manufacturer's permit with the state.

Beau's Billiard, Bowling and Arcade, 100 Village Road, Port Lavaca. Demerits: 4. Date-label food kept in cooler over 24 hours.

Shaved Ice Paradise, Mobile Unit, Magnolia Beach. Demerits: 4. Ice bags need to have manufacturer information on the bags. Keep receipts for wastewater in the mobile unit.

Red River St., Victoria; The Salvation Army, 1302 N. Louis St., Victoria. Demerits: 3.

Miller Seafood Co. Inc, 1102 Broadway St., Port Lavaca; DeTar Hospital North, 101 Medical Drive, Victoria; Gone Bananas, 2202 N. Laurent St., Victoria; Knebel Shaved Ice, Mobile Unit, Victoria; Prickly Pear Cafe, 102 Banyan Court, Victoria; Taco Express, 2808-A S. Laurent St., Victoria; Miss P's Sweet Ice Tea and Sandwiches, 4496 Cheapside Road, Westhoff; Cracker Barrel No. 3, 3801 N. Halsey St., Victoria; Hotel Victoria, 5401 Houston Highway, Victoria. Demerits: 0.

REINSPECTIONS

Highway 111 Shell, 201 S. Wells St., Edna, inspected May 12 with 12 demerits. Reinspected May 19 with improper cold-hold violation.

Four Season's Restaurant, 1005 N. Virginia St., Port Lavaca, inspected May 8 with 16 demerits. Reinspected May 20 with all violations corrected.

Paletera La Salud, 602 W. Main St., Port Lavaca, inspected April 29 with 7 demerits. Reinspected May 15 with violations corrected. Recommend keeping watermelons off the ground. Recommend replacing toilet lid in women's restroom. Correct warewashing procedures are to wash, rinse and sanitize.

China B, 3611 N. Navarro St., Victoria, inspected May 8 with 45 demerits. Reinspected May 20 with need to keep working on: washing hands before putting on gloves; keeping back door closed; not using thank-you sacks to store food; using buffet plate sign. Most violations corrected.

JR's Shell, 3702 N. Laurent St., Victoria, inspected May 13 with 23 demerits. Reinspected May 20 with leak at the mop sink repaired. Labels for ice bags are now in order.

La Hacienda Mexican Cafe No. 1, 7702 N. Navarro St., Victoria, inspected March 13 with 21 demerits. Reinspected May 13 with most violations corrected.
