Hmm...chicken mole is what I would say when my mom would be in the kitchen cooking it. It also brings back memories because as I was growing up I recall that my mom would only make this delicious mexican dish for special occasions. This meant our family baptismals, birthdays, weddings and anniversaries because she knew that all our family members would be there. Chicken mole is basically parts of the chicken cooked and then the special sauce is added. In Mexico, it often refers to a specific sauce which is known in Spanish by mole poblano. This is because all mole preparations begin with one or more types of chili pepper and then other ingredients are added for taste. Now thirty three years later I have kept the tradition and still use my mom's recipe for the chicken mole. The only difference is that in my houshold I do not make chicken mole for only special occasions but when my family wants me to make it. My tradition started when I married and moved to Victoria and made it for our first year anniversary. Through the years this has become my family's favorite dish and now I have shared this special recipe with my daughter.
