I have been really impressed with all the recipes that we were given at our Fit Camp. Everything has been very flavorful and well filling. I have been asked by several of my family members and friends to share the recipes, so I will try to add one daily. So stay posted!
MEXICAN STYLE BREAKFAST MIGAS
6 H-E-B White Corn Tortillas, cut into small pieces
1 Tablespoon Canola Oil
1/2 cup chopped: Onions, Bell Pepper and Tomato
1/4 cup each; chopped Jalapeno and Cilantro
3 cups H-E-B Real Egg
1 teaspoon H-E-B Texas Original Fajita seasoning, beef or chicken flavor
Heat a heavy bottom skillet over high heat for 2 minutes. Add the oil, onions, bell pepper and tortilla pieces. Stir-fry for 4 minutes.
Add the jalapeno, tomato and cilantro and stir-fry for 2 minutes. Add the H-E-B real egg and stir as the egg begins to set. Season with the fajita seasoning and serve.
