Father's Day is this weekend and what could be more fun than making pancakes for breakfast (that's what I'm going to do ...but, SHHHH, don't tell Melvin!).

Here is the world's easiest recipe. You can make it in about five minutes, but even better!-- with your guidance, kids can make it. What a thrill to "cook for Daddy."

Here it is.
Put in a bowl and mix together: 1 C. flour, 1 t. sugar, 1 t. salt, 2 heaping t. baking powder (you can even do this part the night before)

Stir together 1 scant C. milk and 1 egg. Melt 4 T. butter (one-half a stick). Add these to dry ingredients. Combine well but don't overmix -- the batter does not need to be completely smooth.

Heat a pan with butter. Make pancakes in any size and shape. If you have never made pancakes before, let them cook on one side until bubbles form (this indicates the batter is cooking), then turn and cook until brown on the second side.

Serve straight from pan, piping hot. Pour on that syrup. YUM!!

P.S. If you want blueberry pancakes, add blueberries to the mixture. If everyone is begging for chocolate chips use those!
