Of course you want to get your work into the hands of as many potential agents and publishers as possible -- that will increase your chances of acceptance, right?

Not necessarily. Pay careful attention when studying the markets and choosing where to send your proposals or manuscripts (read carefully to see which they prefer).

Some agents and/or editors DO NOT accept simultaneous submissions. They want to be the only one looking at your proposed book. Their market listings will spell this out specifically.

IF you do send out simultaneous submissions to those that accept them, tell them so in your cover letter. Let them know others are considering your work.
