Thanx to dear Rusty, and a tidbit in an article on jelly by my second favorite Houston Chronicle columnist, Ken Hoffman (of course, Leon Hale takes first place), I got to thinking about eggs, jelly, biscuits, sausage, pancakes.....breakfast!

I recall that my father's favorite jelly is apple, which is a variety that you don't run into very often and absolutely cannot find in restaurants. Mother was partial to plum jelly, particularly the Bama brand. I myself love blackberry and strawberry. When was the last time you visited the jelly/syrup aisle in the store? So many varieties, it makes one's head spin. Dad's favorite is Karo syrup, pure and simple. I always thought Karo to be more appropriate for recipies, as mom and I favored Steen's pure cane ribbon syrup. Nothing better! Especially on homemade biscuits....pure heaven.

What about the meat of the matter? How do YOU like your eggs? Scrambled, over-easy, poached, in an omelette? Do you like a side of sausage, bacon, ham, or perhaps steak? How about the sweet stuff - pancakes vs. waffles? Unfortunately for me, I like them ALL. Just maybe not at the same meal. I would wind up waddling away from the table instead of walking away! Did you check out some of the ideas on Rusty's posting about deviled eggs? Even leftover deviled eggs can serve as fine breakfast fare. Do you prefer oatmeal to cream of wheat, or does cold cereal with a few berries fit the bill in the a.m. for you?

I can tell you what I will be having tomorrow morning.  A stout cuppa joe (or two, or ten) with a piece of banana nut bread I just baked this evening. Fine for a light breakfast, or a snack anytime. If that doesn't cut it for you, how about a doughnut? Make mine a Shipley's. Some of you may prefer Krispy Kreme, or even a Dunkin' Donut. The choice is yours. The endless variety of combinations is what makes breakfast such an appealing meal to me. Do you have time in the early morning hours to enjoy a good breakfast, or do you rush out the door without, or (even worse) eat an Egg McMuffin on the run between here and there? I would love to hear about your favorite breakfast foods and experiences. The thing I always think about when I think of breakfast is family. It always seemed to be a family thing at our house, particularly on Sundays, when we would rise late and have an even later breakfast around the table. Lazy days!

    My mom used to make homemade apple butter. It was fantastic! We still have the last of it stored somewhere. Maybe I can talk her into doing it again this summer, when she's not teaching. Just thinking of it reminds me of the old Disney Johnny Appleseed cartoon. I loved the American folk hero series they did! I miss being a kid.

  • pmccloud - I don't know about grits and salsa together myself. Never tried it....hmm...I love the idea of the peanut butter pancakes! How cool! And, the thought of dewberry jam....excuse me while I go raid the kitchen now!

  • I have to admit, I haven't tried grits nor plan to either. I went to Berclair one year for a mother's day outing at the mansion. They served grits with salsa for one of their side dishes to the entree. I didn't even try...
    Momma makes dewberry jam. That's some gooood eatin'. Especially on some homemade biscuits with homemade sausage patties. I think she invented peanut butter pancakes too, which are actually toast with peanut butter smothered with Karo syrup. The grandchildren beg for it. They even skip supper for it!

  • Yep, sandwichh, I think I feel the plaque building up by the minute. I know what you mean, there IS no better way to fry an egg than in bacon grease. YUM. I remember saving the grease we didn't use in the fridge in a container, and using it later to grease a pan for cornbread, and those bacon drippings would sometimes go on top of the cornbread batter before baking.....gosh, what a delicious and simple meal. I grew up eating like that, and am okay physically thus far. Maybe you're right, it's just the luck of the draw. Mother loved sugar on her grits, but dad and I prefer butter and pepper. So simple and SO good! Thanx for bringing back such good memories.

  • Eggs, eggs, eggs, I love them. I usually eat eggs for breakfast and still no problems with the cholestrol, which I believe is just mainly genetics.
    Being a true Southerner I like scrambled best with grits, yes grits. Put butter and salt on the grits, sugar when I was a youngster, and mix the eggs and grits together..MMMMM....MMMMM. Bacon and some good  buscuits. I best like the buscuits with butter and some good Apple Butter. Hard to find good Apple Butter.
    In the old days of my momma and grandma's, fry the bacon first then fry the eggs up in left over grease. Miss it, miss them mainly. Arteries clogged yet?
