I hope you're not all too stuffed from the yearly feast to enjoy another simple recipe. This is one of my favorite appetizers/snack foods.
1 lb. block of Velveeta cheese
1 can Mexican Fiesta Rotel tomatoes
Pyrex bowl (or any other microwavable container)
This is one of the simplest and quickest things you can make. Start by cutting the cheese into squares. They don't have to be tiny. Just enough so you're not trying to melt giant blocks of cheese. Something like 1 inch cubes.
Put the cubes into a bowl and warm them in the microwave on high power (That's typically the default for most microwaves I've used.). Depending on how powerful yours is, set the cook time at 2 to 1:30 minutes.
Once that's done, take it out and stir in the Rotel. You can use any blend you like, but I prefer the Mexican Fiesta blend. Put the mix back into the microwave for 1:30 or 1:45.
Stir it again. If there are some small/tiny bits of cheese, or one or two stubborn globs that don't want to melt, it's time to use the whisk. If it's still really chunky, microwave at 1:30 minute intervals until it reaches the right consistency for a whisk.
Whisk until the cheese is smooth and then serve with your favorite tortilla chips. I prefer the Tostitos Scoops because they make a perfect shovel for the queso. It's great for a movie snack or a little something before the big meal is finished. It also works well with fajitas and other Mexican dishes. Enjoy!
