• A good variation on this is the meat queso. Fry up 1lb of Jimmy Deans sausage, then 1lb of hamburger - add into the mix above. Can make a meal out of this quickly.

  • This is one of the most tried and true recipes I know. Many years ago, before we had microwaves, and there was only one  kind of Ro-Tel on the market, my mother would make this, slowly, in a double boiler on the stove. That occasion usually meant our cousins were coming over to visit, the adults would play poker all night and drink Singapore Slings (just seemed to go with the dip, I guess), and the kids would play whatever games were available. And dip for all to enjoy! Thanx for bringing back fond memories. I still make this dip, although in the microwave now, and find it especially enjoyable with Triscuits - those woven crackers seem to "hold" more dip, and offer just the right crunch. If I weren't so full still from Thanksgiving goodies, I would make some now....
