Food service inspections

The Victoria County Public Health Department Environmental Health Division inspects places where food is served in Victoria, DeWitt, Jackson and Calhoun counties.

In the inspection reports, each violation in the Food Temperature/Time Requirements category is 5 demerits; in the Personnel/Handling/Source Requirements category, 4 demerits; and in the Facility and Equipment Requirements, 3 demerits. Zero is a perfect score, while 100 demerits is the worst possible score.

Each Wednesday, the Advocate publishes inspection results from the previous week. All demerits are reported, but only those in the categories of Food Temperature/Time Requirements and Personnel/Handling/Source Requirements are detailed.

FOOD SERVICE INSPECTIONS FOR WEEK ENDING FEB. 3

The Green Iguana Grill, 137 E. Main St., Port Lavaca. Demerits: 23. Keep employee foods separate from other foods. Use licensed pest control only. Address problem with presence of gnats. Need a certified food manager. Need certified food handlers. Need chlorine test strips. Clean the ice machine and deli slicer. Employees must wear hair nets or ball caps. Store sanitizer towels in a sanitizer bucket with proper concentration of sanitizer. Clean the food preparation counters. Clean the ceiling tiles, walls and floors. Clean the toilet floor. Need a sign posted in restroom.

Primo's Quik Stop, 1100 US 59 W., Ganado. Demerits: 19. Water leak at hand-washing sink needs repair. Items in freezer have to have a use-by date - such as the pork chops. Walk-in items also. Old certified food manager posted cannot view date. Need to display CFM certificate with expiration date. No certified food handlers. Gave Primo office the number so he can get information on upcoming food handlers' class. Do not store fajita meat in oyster container. Need hand-washing sink in ice bagging area. Need soap at hand-washing sink in kitchen. Ice bags need to have El Campo store address. Primo said mop water gets dumped on the ground. Mop sink is not hooked up, has no cover and is full of water. Need a thermometer in walk-in.

La Antigua, 737 N. SH 35, Port Lavaca. Demerits: 16. Improper cold-hold temperatures. Need to repair tabletop to keep food at 41 degrees or below. Develop written policy using time as a public health control. Improper hot-hold temperatures. Soup, rice, beef fajita not at 135 degrees. Raw bacon should not be stored over tortillas. Need thermometer in Whirlpool cooler and single-door True cooler. Improper thawing of raw meat on counter at room temperature. Thaw frozen meat in cooler. Store utensils with handle up in dry ingredients and rice. Label all storage bins. Need light shields in freezer and walk-in cooler. Floor in dish room is not easily cleanable, nonabsorbent. Door in dish room needs to be replaced.

Greek's 205, 205 E. Constitution St., Victoria. Demerits: 16. Improper cold-hold temperature. Tabletop not holding at 41 degrees. Need a certified food manager. All employees need a food handler certificate. Post a consumer advisory for undercooked food items. Post a current 2017 permit. Need hand-washing sink in grill area. Clean the ice machine. Use a licensed pest control only. Pest spray was found in kitchen.

La Cabana, 2013 E. Red River St., Victoria. Demerits: 16. Need procedure documented for foods not held at 41 degrees or less or 135 degrees or greater. Need to keep records of time and temperature. Clean the ice machine. Need to install mop sink with hot and cold running water. Need to post certified food manager certificate visible to public. Need to have consumer advisory disclosure and reminder for undercooked items on menu. Discard knives in disrepair. Replace nonworking light bulbs. Need light shields. Need to post last inspections or placard stating inspection report available upon request.

Edna Seafood and Grill, 1022 S. Wells St., Edna. Demerits: 14. Thaw food under cold, running water or in cooler. Need a certified food manager. Need thermometer in Coke cooler. Food handler has 5 certificates - one just hired. Discard relish that was not refrigerated after opening. Need covered trash container in women's restroom. Need a 2017 certificate. Post the last inspection or provide sign that inspection is available upon request. Need to have a procedure on cleaning vomit and diarrhea accidents. Store medication out of food preparation area. Oscars does the pest control service. Have a disclosure on napkin holder. Need identification on items not fully cooked, like steaks and oysters.

Cajun Cowboys Seafood and Sports, 5209 N. Navarro St., Victoria. Demerits: 14. Use tongs for lemons. Use licensed pest control only. Need one certified food manager. All employees need food handler certification. Date-label cooked, ready-to-eat foods. Thaw foods properly under cold running water. Employees must wear hair restraints.

Little Caesar's No. 4, 1301 E. Rio Grande St., Victoria. Demerits: 13. Keep time log on pizza waiting to be cooked. Keep covered in walk-in. Certified food manager certificate needs to be posted. Food handler cards need to be available. Employee drinks need lids and straws. Store tongs on clean, sanitized surface. Need sign that states last inspection available upon request.

Frontier Bar B Que Inc., 608 N. East St., Edna. Demerits: 9. Label chemical bottles. Do not use pesticide spray and fly bait if not approved for food establishment. Pest control must be done by licensed pest control applicator. May not have dog in establishment. Connect the hand sink in the pit area. Or the pit hand sink must have hot water. Right now, the cold knob is hot. Need a 2017 permit. May need to add backsplash at hand sink in pit area.

Kentucky Fried Chicken, 1010 E. Rio Grande St., Victoria. Demerits: 8. Post the certified food manager certificate. Employees need food handler's certificate. Post the 2017 food permit. Replace the missing floor tiles. Clean the walls and ceilings.

B&B Express No. 5002, 101 W. York St., Ganado. Demerits: 7. Tongs (laying next to peppers) in "salad" deli display cannot be stored directly on rack. Recommend storing in shallow container. Must wash hands before glove use. All employees need food handler certificate. There is no mop sink. Work order is requested and has been submitted for sink to be installed. As of right now, the mop water is being dumped in floor drain.

Dairy Queen No. 14142, 1202 E. US 59, Ganado. Demerits: 7. Turbo two-door tabletop needs thermometer. Employee drinks must have lids and straws. Water bottles are not allowed. Restroom needs sign posted. All employees must wash hands before returning to work. Need a food handler's certification. Gave handout for class at the health department. Mop sink is not hooked up yet. Mop water is currently being dumped down the floor drain.

McDonald's, 817 N. Wells St., Edna. Demerits: 6. Store ice scoop on clean, sanitized surface. Hot water at hand sink is 92.3 degrees. Hot does not turn completely off. Need to post the certified food managers. In the restrooms, need paper towel dispenser to prevent re-contamination when opening door. Faucet is automatic and door opens into the restroom. Post sign that last inspection form is available upon request.

Big Bear Shrimp and Seafood, 2241 N. SH 35, Port Lavaca. Demerits: 6. All items in freezer need proper labels. Thaw foods properly under cold, running water. Need a certified food manager. Employees must wear ball caps or hair nets.

The Courtyard Rehabilitation and Healthcare Center, 3401 E. Airline Road, Victoria. Demerits: 5. Need certified food manager certificate. Post the 2017 permit. Last inspection needs to be posted or a placard stating inspection report is available upon request.

Meat Center, 3035 Farm-to-Market Road 822, Edna. Demerits: 4. Water sample from July 28, 2016, OK. Do twice a year. Food manager is needed. Gave information on classes. Food handler is needed. Make sure hand sink is used for hand-washing only.

Chipotle Mexican Grill No. 2505, 7002 N. Navarro St., Suite 100, Victoria. Demerits: 3.

Amazing Grace Learning Center and Infant Care, 202 E. Main St., Edna; Love's Travel Stop Subway No. 297, 1509 E. Rose St., Edna; Snowflake Donuts, 1002 S. Third St., Ganado; CHG Senior Living of Port Lavaca LLC dba Trinity Shores, 201 Trinity Shores Drive, Port Lavaca; Hideaway, 1807 Stolz St., Victoria; Popeye's Louisiana Kitchen, 2912 Houston Highway, Victoria; Uncle Mutt's Bar-B-Q Company, 5404 N. Navarro St., Victoria. Demerits: 2.

Ami's Daycare, 1010 S. Wells St., Edna; Chili's Bar & Grill, 5004 N. Navarro St., Victoria; H-E-B Food Store No. 554, 1505 E. Rio Grande St., Victoria; Jim's Big Burger, 102 Glascow St., Victoria; Sonic Drive In No. 5262, 3008 Houston Highway, Victoria; Subway No. 1, 8701 N. Navarro St., Victoria; Whataburger No. 616, 8908 N. Navarro St., Victoria. Demerits: 0.

RE-INSPECTIONS

The Shrimp Shack, 314 W. Broadway St., Seadrift, inspected Nov. 10 with 19 demerits. Re-inspected Jan. 25 with tabletop at 41 to 44 degrees. Will use ice during the lunch rush. Will not store any food over night. They should have their four-hour written times documented and posted. May not exceed four hours. Discard any food left over. There was a leak at the hand sink, and it was corrected at time of inspection.

Buffalo Wild Wings No. 232, 7905 N. Navarro St., Victoria, inspected Jan. 3 with 8 demerits. Re-inspected Jan. 26 with violations corrected.

H-E-B Food Store No. 092, 6106 N. Navarro St., Victoria, inspected Jan. 23 with 3 demerits. Re-inspected Jan. 27 with violation corrected.
